This would have been fine and dandy, but Boulder went a step further by aging the beer in Jameson Irish Whiskey-soaked oak. The stout straddles the line between a regular stout and an imperial stout with its nearly 7-percent alcohol content, allowing for more malt flavor without any of the heavy alcohol effects. A lot of stouts and porters have minimal aromas, but Irish Blessing had wonderful chocolate-caramel-coffee aromas that set the stage for what was to come. The coffee roast was initially the most prominent in the flavor, but after the first taste sensation, the malts kicked in, adding another layer of enjoyment.
